How can I pick a specific data set?

There are two ways to pick a data set. In the left pane, select data layers. Open the topography drop down and find either a survey or as built dataset that you want to select. Click the magnifying glass next to that date. The second way is to use the timeline in the bottom of the pane. Click and drag to the right or left to move between datasets. Use the scroll wheel on the mouse to zoom the timeline scale in or out. If you want to select a specific dataset, you can also click on that dot on the timeline.
